Blackberry Vinaigrette Salad

Blackberry Vinaigrette Salad

Ingredients

  • Local Lettuce or Spinach
  • Local Carrots
  • Local Salad Turnips
  • Local Cucumbers
  • Local Green Beans
  • Any other Salad Veggies in Season
  • Vinaigrette
  • Half Pint Local Blackberries
  • ½ cup Olive Oil
  • 1 tablespoon Red Wine Vinegar
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 2-3 tablespoons Local Honey

Instructions

  1. Wash and prepare all salad ingredients.
  2. Cut veggies to desired size.
  3. Assemble your salad with lettuce and toppings.
  4. Combine blackberries, vinegar, honey, salt and pepper in a blender. Blend until well combined. With the blender running on low, slowly drizzle in olive oil.
  5. Blend until well combined. Serve over salad.
