It’s easy finding local greens! Leafy green veggies thrive in WNC’s cool months of spring and fall, but they also grow year-round. Look for these nutritious leaves in your school cafeteria and at your local farmers market.

Farmers grow many types of greens, including lettuce, kale, collards, arugula, Swiss chard, and spinach. Enjoy fresh greens like lettuce and spinach in salads or on sandwiches for a delicious local lunch. Fun fact: darker green lettuce leaves are more nutritious than lighter green leaves.
