Zucchini Cakes
Ingredients
- 1 large or 2 small local zucchini
- ½ cup parmesan
- 1 cup bread crumbs
- A pinch nutmeg
- ¼ teaspoon paprika
- 2 cloves garlic
- 1 local egg
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 1-2 tablespoons olive oil
Instructions
- Grate zucchini using the large side of a cheese grater.
- Once the zucchini is grated, remove the excess water by pressing the shreds between paper towels.
- Place into a bowl.
- Grate parmesan, chop garlic, and add to zucchini. Add breadcrumbs, nutmeg, paprika, salt and pepper to zucchini and mix to combine.
- Crack egg and beat with a fork. Add to zucchini mixture and mix until well combined.
- Using a 2 tablespoon scoop, scoop out mixture onto a parchment lined baking sheet. Flatten each mound to make a patty.
- Heat olive oil over medium heat. Once the oil is hot, fry the patties until golden brown on each side. This should be about 3-4 minutes on each side.
