Blackberry Vinaigrette Salad
Ingredients
- Local Lettuce or Spinach
- Local Carrots
- Local Salad Turnips
- Local Cucumbers
- Local Green Beans
- Any other Salad Veggies in Season
- Half Pint Local Blackberries
- ½ cup Olive Oil
- 1 tablespoon Red Wine Vinegar
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 2-3 tablespoons Local Honey
Vinaigrette
Instructions
- Wash and prepare all salad ingredients.
- Cut veggies to desired size.
- Assemble your salad with lettuce and toppings.
- Combine blackberries, vinegar, honey, salt and pepper in a blender. Blend until well combined. With the blender running on low, slowly drizzle in olive oil.
- Blend until well combined. Serve over salad.
