The healthy benefits of a spinach salad flavored with unique, Asian-inspired flair. Make the bacon and hard-boiled eggs ahead of time and the recipe can be made in a classroom without a stovetop or oven.

A delicious variation on a mashed potato recipe that utilizes local potatoes and local spinach.

Oliver is visiting his grandfather and all he wants to eat is fried potatoes from the garden. But grandfather has an idea – Oliver needs to find the potatoes, and eat any vegetable that he finds first.

In early March students at Mills River Elementary School in Henderson County sampled spinach smoothies as a part of the school’s ‘Jump Rope for Heart’ day.

This recipe puts a school garden spin on a traditional recipe. Mix it up by adding other herbs and veggies you might have growing in your garden.

Containing white beans, local spinach, and just enough garlic, this zesty dip is perfect with tortilla chips, pita bread, or homemade crackers.

This lesson plan has step by step instructions for cooking in the classroom and features literature and curriculum connections.


Students can vote on the fruit of choice to sweeten these delicious spring smoothies.
